Mom's who are on the go and have busy schedules DO NOT have time to mess around in the kitchen but they DO want their families to have good tasting and nutritious food to eat nightly. Just because the meals are healthy does NOT mean they don't taste good. That's a myth and a bad myth!
So how do you do that in 30 minutes? One: you can prep your weekly meals once a week, suggestively on Sunday and either refrigerate or freeze the meals until you need them. Because most of the meals I show you only take 10-15 minutes to prep, you could also prep and bake/cook the same night as you eat the meal. Kids always want to help so get your littles in there to help out! More the merrier!

The best chicken nuggets you will ever have – crisp-tender and
completely homemade with Parmesan goodness!
INGREDIENTS:
·
1/2 cup extra virgin olive oil
·
1 pound boneless, skinless chicken
breasts, cut into 1-inch chunks
·
Sea Salt/Kosher salt and freshly
ground black pepper, to taste
·
1 cup Panko* (*Panko is a Japanese-style
breadcrumb and can be found in the Asian section of your local grocery store.)
·
1/4 cup freshly grated Parmesan
·
1 teaspoon garlic powder
·
1/2 teaspoon smoked paprika
·
1/2 cup all-purpose Whole Wheat
flour
·
2 large eggs, beaten
·
2 tablespoons chopped fresh
parsley leaves
DIRECTIONS:
1.
Heat vegetable oil in a large
skillet over medium high heat.
2.
Season chicken with salt and pepper,
to taste.
3.
In a large bowl, combine Panko,
Parmesan, garlic powder and smoked paprika; season with salt and pepper, to
taste. Set aside.
4.
Working in batches, dredge
chicken in flour, dip into eggs, then dredge in Panko mixture, pressing to
coat.
5.
Add chicken to the skillet, 5
or 6 at a time, and cook until evenly golden and crispy, about 3-4 minutes.
Transfer to a paper towel-lined plate.
6.
Serve immediately, garnished
with Parmesan and parsley, if desired.
